The Luwex Flexible Sharpener includes two grades of abrasive paper.

Use the course red paper to re-form or initial dressing of old, rusty or very blunt knives.

The smoother grey paper for finishing, polishing and maintaining an edge.

wpe6.jpg (9565 bytes)A handy tip to use when learning to use the Luwex Sharpener is to mark the blade with felt tip pen. This enables you to visually see what part is being sharpened. The aim is to sharpen the cutting edge in a flat plane and a slight angle from the cutting edge to the back of the knife. Only 1 mm of ink should remain on the back edge of the knife.  No separate angle for the cutting edge is required.

Fix the Sharpener using the small loop to a nail and pull tight to attach a strip of abrasive material. Place the paper flush to the right hand edge of the sharpener and smartly fold the overhanging paper over the left-hand side. Reverse this process for left-hand use.

Position the knife on the sharpener cutting side down with the cutting edge facing away from you. The Sharpener should be held taut in use. The hook of the knife should always be firm against the left-hand side of the sharpener. The blade is held approximately 5° off square. Minimum down pressure is needed to sharpen. Start with small backwards and forward movements over a small portion of the sharpener near the fixing point. Maintaining the same angle on both strokes is essential .

Minimum pressure is required for sharpening.

When the knife has a uniform finish on the cutting edge, dress the back of the blade to remove any burrs. This process is similar to the cutting edge except the aim is to hold the blade perfectly flat, removing traces of the marker pen.

The sharpener is held very taut for these processes.

For knife maintenance, polishing and re-sharpening, the grey paper should be sufficient.

Warning

Care should be taken when using knives as the blade will be razor sharp.
